About

Laura has over 18 years of experience as a professor of Health Sciences at the University of Saint Joseph, at Holyoke Community College and Franklin Pierce University where she has taught nutrition, fitness, culinary and public health courses.

In addition to her health coaching services offered here, Laura also offers eating disorder recovery coaching through The Binge Code.


She is also an author for Wiley and Sons Publishing. Her digital product, Christoph's Food For Thought, guides professors and students through an introductory nutrition course in a flipped classroom environment, and she is also coauthor of Visualizing Nutrition, 5th Edition, an introductory college nutrition textbook.
 
Laura is an avid rower and runner. She rowed and coached at UMass Amherst, and now competes as a masters sculler for Riverfront Recapture in Hartford, where she specializes in lightweight doubles events.  She is also a McMillan Running certified coach, and offers training plans for running enthusiasts from the 5k to the marathon.

She taught be so much beyond what you will find in the textbooks. She was also a big help getting me through the process of transferring from a community college to UMASS.

“Dr. Laura Christoph was recommended to me by a Physical Therapist whom I knew through our local  running club.  Dr. Christoph was very active herself and it was important to me to receive Nutrition care from a professional who shared many of the same experiences as I did.  My health issues were multi-dimensional as I was previously very active but had suffered several injuries, one of which required surgical repair.  In this time frame I put on some weight.  As I picked up my physical activity I would again suffer minor injuries that would prevent further physical activity, the cycle continued endlessly…  To compound the issue I was diagnosed as Pre-Diabetic years earlier but was able to control my A1C through diet.  At this time my A1C spiked to a point where I crossed the line to my being considered an uncontrolled diabetic.  Working with Dr. Christoph I was able to figure out a program that would allow me to control my A1C through diet as well as ensure I had enough energy to start physical activity.  Within a 3 month period my A1C was reduced from 7.5 to 5.8 and I lost over 10 lbs.  I continued with Dr. Christoph for 1 year and no question went unanswered or issue not attended to.  Her attention to detail combined with her genuine concern was appreciated more than she will ever know.  I cannot recommend Dr. Christoph strongly enough!”
